Honey
In the region of Matarraña there are two moments of full flowering, in spring and autumn, from which an exquisite honey is produced with extraordinary subtlety and aroma reminiscent of the floral origin from which it comes.
The main wild plants for the elaboration of the honey are the rosemary, thyme and lavender, and also the flower of the almond tree. The resulting honey depends on the age of the bees, the type of flowers, the season of the year and the time of flowering of the plants, although in general lines, the honey of this region is amber colored snowy and somewhat thick consistency, which it becomes almost white when crystallized. Honey has very beneficial properties for the human organism, and from this food, other typical products of the region are elaborated as the “coc amb mel”, typical dessert at the end of the harvest of the olives, or the “crespells“.
