Guirlache

Crunchy almond nougat, a traditional speciality of the Matarraña region.

Ingredients

  • To taste

    Three glasses of Marcona almonds broken into pieces

  • To taste

    Three glasses of sugar

  1. Put the almonds and the sugar in a frying pan

  2. Stir the mixture until the sugar dissolves completely, turning into caramel and forming a compact mass with the almonds

  3. As soon as the mixture is ready, pour it onto a hard surface that has been previously oiled

  4. Flatten the hot guirlache and turn it into a thin sheet

  5. Quickly, coat a knife with oil and cut into thin strips

  6. You must cut the guirlache quickly, because if it cools down it hardens too much and breaks when cut
